Toast Tuesday Three Ways

Avocado Toast / Hardboiled Egg Toast / Strawberry Almond Butter Toast

 

I'm not sure how all of you feel, but in my books, toast is good any way you make it. Just the smell of it warming up in the toaster is appealing! This week on #toasttuesday, my Dad/Intern/CFO was visiting, to go over a few business details with me. Seriously, 'Intern', sometimes I ask him to deliver checks and packages for me. Yep, I'm a daddy's girl.

After all the yummy food he gobbled up over Thanksgiving, he requested a healthy and light lunch, which is exactly what I was craving too! I decided to make toast three ways. 

Toast Tuesday can be made easy, with these three clean and simple recipes. Avocado Toast, Hardboiled Egg Toast, and Strawberry Almond Butter Toast recipes - read on!

Ingredients are key! Here's what you need to make 2 servings of all three toast options: 

3 Pieces Mestemacher Fitness Bread

2 Eggs

1 Avocado 

4 Strawberries

Nutiva Coconut Oil

Woodstock Almond Butter - smooth unsalted*

Pomegranate Seeds

McCormick Ground Cinnamon

Salt 

Pepper

Simply Organic Crushed Red Pepper Flakes

Simply Organic Curry Powder

Olive Oil

I like to start by eating the hardboiled egg toast, followed by the avocado toast, and then I finish off with dessert, the strawberry almond butter toast. Here are directions, in that order. 

 

Hardboiled Eggs, Coconut Oil, Fitness Bread

Hardboiled Egg Toast

1. Boil your eggs for 8-10 minutes depending on how soft you want them. I like when they are a little bit runny. 

2. As soon as the eggs are done boiling, run them under cold water, but them in a jar and place them in the fridge. 

3. Cut one piece of fitness bread in half, and pop both pieces in the toaster. I usually toast on one of the longer settings - this bread is very moist, and takes some time to get a little bit crispy. 

4. While the toast is toasting, crack your boiled eggs, and peel off all of the shell. 

5. As soon as the toast pops, spread a little bit of coconut oil on top, while it's warm. 

6. Slice your boiled eggs into 3/8" - 1/2" slices and place on top of the bread (1 egg for each slice of bread).  

7. Sprinkle salt and a pinch of curry powder on top. 

 

Avocado Toast

1. Cut one piece of fitness bread in half, and pop both pieces in the toaster. I usually toast on one of the longer settings - this bread is very moist, and takes some time to get a little bit crispy. 

2. While your toast is toasting, use a spoon to scoop the avocado meat out of the skin, and place it in a bowl. 

3. Drizzle a little bit of olive oil and sprinkle sea salt on the avocado, mash with a fork. If you like spice, add the red pepper flakes before mixing. *

4. As soon as the toast pops, spread a little bit of coconut oil on top, while it's warm.

5. Spread your avocado mixture on top of the toast, and sprinkle a few pomegranate seeds on top. 

 

Strawberry Almond Butter Toast

Strawberry Almond Butter Toast

1. Cut one piece of fitness bread in half, and pop both pieces in the toaster. I usually toast on one of the longer settings - this bread is very moist, and takes some time to get a little bit crispy. 

2. While your toast is toasting, slice up 3 to 4 strawberries in thin slices. 

3. As soon as the toast pops, spread a little bit of almond butter on top, while it's warm.

4. Add your strawberry slices on top and sprinkle a little bit of cinnamon. If you want it sweeter, drizzle honey on top.*
