Cashew Carrot Ginger Soup with Kale and Shrimp

Ditmas Park, Brooklyn has lots to offer, including our local food co-op, Flatbush Food Co-op, which stocks a variety of organic foods that we can't seem to find in the regular grocery. The downside, you leave with a pretty big hole in your pocket. It's expensive! It's important to invest in your health, am I right? Recently I stumbled upon a delicious soup sale, and picked up a few cartons of Pacific Organic Soups. One in particular was their Organic Cashew Carrot Ginger Soup. I was tempted to just dump it in a pot and heat it up (and I'm sure it would still be good), but instead I spiced it up a bit!

THE INGREDIENTS: 

  • Half carton of pacific organic cashew carrot ginger soup 
  • 2 full leaves of kale 
  • 1 tsp of curry powder 
  • 1/2 tsp of cayenne pepper 
  • 5 pre cooked frozen shrimp 
  • 1 small onion 
  • 2 cloves of garlic 
  • 1 small red potato 
  • sea salt 
  • pepper
  • sesame oil

    HOW TO MAKE IT: 

    1. Pour half the carton of cashew carrot ginger soup into a medium size pot, turn the heat on low, so it slowly starts to warm up. 

    2. While the broth is warming, chop:

    • 1 small onion into 1/4 inch pieces
    • 2 cloves of garlic (as small as you can dice them
    • 1 small red potato in 1/2" squares 

      3. Heat sesame oil in small pan and add the below ingredients: 

      • 5 pre cooked frozen shrimp
      • chopped onions 
      • chopped garlic 
      • chopped potato
      • sea salt
      • pepper

        4. Let this goodness sauté until the onions and garlic start to brown a little and smell fragrant. At the same time the shrimp should begin to thaw.  

        5. In the meantime, rinse your kale and remove it from the stems. Loosely chop your kale. 

        6. Transfer the ingredients from your sauté pan into the pot with the CCG (cashew carrot ginger) broth. 

        7. Add kale 

        8. Add 1 tsp of curry powder

        9. Add 1/2 tsp of cayenne pepper (or more if you want it spicier!)

        10. Cover, and bring to a boil for 3-5 mins

        And voilà! Pour it in a bowl and enjoy!

        *This recipe serves 1 big bowl of soup. If you're cooking for 2, just double the ingredients!
