Blissful Eats is a family run business by health coach and mom of 2, Nicole Culver. When not committing us to a 28 day breakfast challenge with her delicious granolas, or thinking up new snack ideas for the brand, Nicole gives back by teaching others how to turn their blogging dreams into a business reality.

AM: Tell us a little bit about yourself and what inspired you to launch Blissful Eats

NC: I am the host of the Blissful Bites podcast and the founder of Blissful Eats snack company! I started Blissful Eats 5 years ago, when I was desperate to quit my teaching career because I was super burned out. I launched it in yoga studios, gyms and in my local community and quit my stable job! It's grown into a lot more, including the inspiration to start a podcast to give back what I've learned over the past few years. Right now I run Blissful Eats with my husband, Blissful Bites podcast and coach women entrepreneurs who want to turn their blog into a business!

AM: You are a busy lady - business owner, health coach and mom of 2! Describe your typical day

NC: My alarm always goes off at 5:02 and I try really hard not to snooze! My husband and I will get up and do some work/professional development. At some point Mila, our youngest will wake up and she'll hang out while we finish up work, until Olivia (almost 4) gets up. Then we'll spend some time together. I usually workout around 8:30/9. Then it's off to work. Depending on the day, whether there is camp/school/babysitter I typically work from 10-2. I aim for 4-5 hours a day for work during the day, but sometimes that gets made up at night after bed time. I don't work A LOT, but I have a balance of work and family time that I'm really in love with right now. I love being able to be home with my girls, share a lot of parenting with my husband and still have a job I love! It's the best of all worlds. Don't let that confuse you with perfection though, because it's organized chaos a lot of the time, but I love it! :)

AM: On your website you offer the 28 day breakfast challenge - what’s your favorite breakfast?

NC: Chia pudding!

AM: Top 3 recipes using granola?

NC: I LOVE the maple nut chocolate bites that Ashely from Fit Mitten Kitchen wrote for our blog, but honestly all of them are amazing. We've got a great group of bloggers who have created amazing recipes for our site! If I'm going for a smoothie, Georgie from In It 4 the Long Run made a delish smoothie topped with my fav no nutty chocolate chip granola!

AM: Where do you buy your ingredients from when cooking at home?

NC: Trader Joes! We get most of our groceries there, but also frequent Whole Foods and get delivery from Amazon Fresh which is perfect when you need something pretty quick!

 

 

AM: What do you like to snack on?

NC: I'm not much of a snacker, I love eating 3 big meals a day, but if I do need a snack I'll make some nut/date bites or grab a Larabar or a Picky Bar!

AM: How do you re-fuel after a workout?

NC: Right now it's a smoothie made with banana, berries, vital proteins, kachava powder and topped with some granola and Nikki's Coconut butter!

AM: Favorite way to workout?

NC: I start the day at 5 am every day, and between work and my family I've got a jam packed day, which means my basement workouts are my BFF. Right now I'm doing Jillian Michaels BodyShred which is an intense 30 minutes. Other recent favs are 21 day fix extreme and PiYo.

 

 

AM: Favorite breakfast spot?

NC: If I'm treating myself I love to go to my local coffee shop, but 98% of the time it's in front of my computer!

AM: Ultimate cheat meal?

NC: I don't really believe in "cheat" meals...so I can't really think of anything. I eat a whole foods diet, but I probably have a little bit TOO much granola + coconut butter daily, but it makes me feel good inside and out, so I'm okay with it. I will say I love the holidays and definitely eat a few extra cookies around that time of year!

 

 

AM: Tell us about your Blissful Bites Podcast

NC: My podcast is ALL about sharing stories of other women entrepreneurs. We do 3 episodes a week, 2 are interviews and one is just me! I have way too much fun asking questions and trying to basically learn as much as I can about my guests. I kind of love asking questions, so the podcast is a perfect job for me! It's very laid back and conversational, but my goal is that the listeners can walk away with some type of take-away for every episode, whether it's a business tip, motivation or just to be like HEY that person has gone through what I'm going through! I've had some great guests, but the most popular episode is Jessica Merchant from How Sweet Eats!

AM: What does the future hold for Blissful Eats?

NC: We are coming out with another paleo granola this fall that I'm psyched about! It's been about a year since we launched a new flavor so I'm very excited about it! It uses almond butter and is my favorite one to date!
