Eating healthy doesn't mean eating boring food, sacrificing, or giving up your favorite meal. So, get comfy (I'm rockin a pair of Alexis Mera's Abstract Joggers with a Hoodie by Entree) and njoy a decadent meal at home.

Snack: Truffled Popcorn
Dinner: Grilled Portobello Burgers with Cashew Cheese, Red Onion, Lettuce & Sliced Tomato, on a Toasted Bun; Crispy Baked Seasoned Fries
Dessert: Grown Folks Strawberry Milk Shake

 

Truffled Popcorn
What's a movie day without popcorn?!?
This grown and sexy recipe for popcorn ditches the butter and replaces it with the divinity of truffle oil. Not only is truffle oil a healthy substitute for butter, it has a delectable umami flavor that is sure to tickle your taste buds.

Ingredients

1/4 Cup Popcorn Kernels

1 t Oil for Popping (vegetable, peanut, popcorn oil, coconut- anything with a high smoke point)
Truffle Oil, to taste
Salt, to taste

Heat a heavy pot with a lid on the stove.  Add the oil of your choice. Add 3 or 4 kernels to the pot. Once popped, add the rest of your kernels. Pop popcorn until there are a couple seconds between kernels popping. Remove from heat.  Put popcorn in a bowl. Drizzle with truffle oil (start with a lil bit, you can always add more) and sprinkle with salt. Shake and swirl the popcorn to distribute the oil and salt. Njoy!

Grilled Portobello Burger
Dairy free & meat free doesn't mean boring- this juicy burger is meaty and vibrant.  Portobello mushrooms marinated in a Balsamic marinade, grilled and paired with melted truffle cashew cheese, red onion, tomato, lettuce & nestled lovingly on a bun- Yum!!!

Grilled Portobello Burgers w/ Truffle Cashew Cheese
(Makes 2 Burgers)
2 Portobello Mushrooms
4 T Balsamic Vinegar*
2 T Olive Oil + Drizzle of Olive Oil
1 Large Clove Garlic, minced
Truffle Cashew Cheese**, 1 Tablespoon or to taste (optional)
Greens (lettuce, arugula or spinach- whatever you have in the fridge)
Red Onion, Sliced (Optional)
Tomato, Sliced (Optional)
2 Burger Buns
Sea or Kosher Salt, to taste
Fresh Ground Pepper, to taste

*Try using an infused balsamic vinegar for the marinade. My favorite is peach balsamic.

**Why cashew cheese? A healthy alternative to its dairy based counterparts, cashew cheese is high in protein and healthy fats. I make my own (see recipe below), but you can buy it at your local gourmet supermarket.


Make Marinade
In a small bowl, combine garlic, balsamic vinegar, salt & pepper. Pour the mixture into a sealable plastic bag or casserole dish.  

Prepare The Mushrooms
Carefully slice the tops off the portobellos by cutting the mushrooms horizontally. Using a spoon, scoop out the gills of the mushroom and discard them. Season the mushrooms with salt n pepper on both sides. Refrigerate the portobellos. Marinate portobello halves in the balsamic mix for at least 1 hour or up to 24 hours.

Grill the Portobellos
Heat a grill pan over medium-high heat. Lightly drizzle grill pan with oil to prevent the mushrooms from sticking.  Arrange the mushrooms on the hot grill pan. Make sure you keep the mushroom pieces (top & bottom) next to each other on the grill. Grill both sides of the mushrooms (about 2-3 min per side).
Arrange mushrooms flat side/inside facing up.
Place 1 Tablespoon of cashew cheese on one side of the mushroom.  Love cashew cheese? Add more. Grill until the cheese gets gooey n melty. Marry the two mushroom halves.


While the cheese is melting, toast your buns on the hot grill. Remove the buns once they are lightly toasted and have grill marks on them.

Plating

Serve the portobello burger on the toasted bun, with lettuce, a slice of tomato & onion, a sprinkle of salt n pepper & a light drizzle of olive oil. I use homemade rolls for my burgers...But you can use your favorite store bought roll or bun. Staying away from carbs? Leave the buns out and use lettuce to wrap the mushroom burgers. No matter how you make it, make it with love! Njoy!


DIY Truffle Cashew Cheese
A hidden secret of vegans for far too long. Cashew cheese is a delicious substitute for dairy based cheese. This cheesy substitute is packed with healthy fats and umami flavor. Give it a try!


Ingredients

1 Cup Raw Cashews
1/4 Cup Nutritional Yeast
2 T Truffle Oil

Place cashews in a bowl & cover with water. Soak the cashews in water for at least an hour. Drain the cashews. Put all ingredients in a food processor or blender and blend till smooth. Park the cashew cheese in the fridge for a couple hours to let it harden up a bit. And viola, you just made cashew cheese.

Oven Baked Spicy Seasoned Fries
Skip the frozen or fast food fries. Making fries from scratch ensures they are made more naturally than their mass produced counterparts.  Made of all natural, whole ingredients- you won't have to worry about the chemical components hidden in your fries. These crispy, spicy, seasoned french fries are off the chain good! Make sure to keep an eye on them in the oven....you want them crispy not crunchy!  

Ingredients

(Serves 2-3)
4 Potatoes
3 T Cornstarch
3-4 Garlic Cloves
1/4 t Paprika
1/4 t Cayenne Pepper
2 t Fresh Cracked Pepper
2 t Sea Salt
2T Vegetable Oil

Prep the Potatoes

Preheat oven to 450 degrees.
Wash Potatoes, leave skins on. Slice potatoes into thick slices and cut slices into fries.
Parboil the potatoes with garlic cloves. Which means: Smash garlic cloves (I usually use about 4) throw them in a large pot, add potatoes and fill with water to cover. cook potatoes on high until a fork can slide through with ease (don’t overcook the potatoes).
Drain potatoes and lay them flat to dry for 5 minutes.
Put the potatoes in a bowl and toss with remaining ingredients. Be creative add more spice or less if you prefer it mild. This is a really easy dish to master, try it once my way and then see how you can put your seasonal mark on it.

Bake the Potatoes

Cover the bottom of a sheet pan with vegetable oil (about 2T).  Arrange the potato wedges on the sheet pan in a single layer.  Bake potatoes for 20 minutes, flip potatoes and bake for another 15-20 minutes.

Top the meal off with a delicious strawberry milkshake. What's a burger night without a decadent  milkshake! This 2 ingredient indulgent treat reminds me of the milkshakes I used to order at the diner as a kid. No need to add sugar, the sweetness of the strawberries blended with coconut milk will definitely satisfy your sweet tooth.  Sweet, refreshing & nostalgic; this frozen treat is the perfect dessert to indulge in after a long day of spoiling yourself.


Ingredients

About 1 Cup of frozen strawberries
About 1/2 Cup almond-coconut milk blend (can't find it in your grocery store- get almond or coconut milk)

Throw the ingredients in a blender and blend till smooth and delicious. Njoy!
